fix: theme toggle causing auth issues due to auto-dispose
- Add @persistentRiverpod annotation for providers that need keepAlive
- ThemeProvider now persists for app lifetime
- Refactored API clients to use @persistentRiverpod
- Documented in ARCHITECTURE.md
